Description

Our sourdough Country Bread is made using organic flour and the most natural and authentic method. A loaf with a thick, golden crust. Well-suited with meats and soft cheeses, as well as delicacies such as foie gras or salmon. The size of the slices makes it a good bread for sandwiches.

Special Note

This product requires 2 days to be prepared and shipped or available for pickup. If you order on Monday it will be ready to be picked up or shipped on Wednesday.

We don't offer slicing for this loaf due to its size. It requires longer time to fully settle and if we slice it within couple hours of baking its quality will be reduced. It is best to slice it at home and it will last longer and taste amazing until the last bite.

Storage Information

We recommend keeping your bread uncovered on your counter rather than in the fridge or a plastic bag. We place our loaves cut side down, so that the crumb isn't exposed to air, while the crust slowly stales.* In a sealed plastic bag, the crust will soften, as the moisture from the bread has nowhere to go, eventually leading to a moldy loaf.

If you don't expect to finish your loaf before it stales, freeze it in a plastic bag. Slice it first, to make toasting ever more convenient.

Revive your stale loaf in the oven at 175°F for 15-20 minutes.

*Technical note: Staling has nothing to due with water loss, as bread actually only loses about 1% of water content as it ages. Rather, the gelatinized starch molecules form into crystalline regions, causing a tightening effect on the bread. By reheating it, you can temporarily disrupt the less stable regions of the chains comprising the starch molecules.

Good but not not nearly “sour” enough for my tastes.

Hi Rodney,

Thank you for your purchase and support of our bakery. Sourdough is really the wrong name for this type of bread as it is not about the flavor but it is about the method. The better name is 'Naturally leavened bread' and in that case, sourness would not be a goal.
Our bread is naturally leavened and our goal is for it not to be sour. If a bread is sour it typically means one of two things: either it over-proofed (over fermented) or vinegar was added to it. Sometimes (although not often at all) we might overproof the dough incidentally but we never add vinegar. Thank you for your understanding.

Feedback would be as follows: a white bread version. I would purchase that in addition to the types that I have purchased. Thank you, really happy to be able to get a good sourdough bread fresh.
